Start the adjika: peel and rinse all the vegetables well, then cut them into small pieces.

Fit a meat grinder with the coarsest plate and grind 2 to 3 heads of garlic, one red hot chili pepper, 1.5 kg of zucchini, 1 kg of tomatoes, 300 g of bell pepper, and 300 g of carrots into a large pot. (A food processor works too.)

Set the pot of ground vegetables on the stove and add 2 tablespoons of sugar and 2 tablespoons of coarse (pickling) salt.

Pour in 100 ml of vegetable oil and stir everything together well.

Cover the pot and bring the vegetables to a boil over high heat.

Stir the vegetables now and then to keep them from scorching.

Once it boils, reduce the heat to medium, cover the pot, and continue simmering the vegetables for 40 minutes, stirring occasionally so they don't scorch.

Five minutes before it's done, pour in 100 ml of distilled white vinegar (9%) and stir everything together well.

Ladle the hot adjika into sterilized jars and seal them tightly with new sterilized lids.

Turn each sealed jar upside down to check the seal, then cover them with a warm blanket until they cool completely.
