Meatless Mushroom and Bean Salad

Cooking method

    Gather the ingredients for the meatless mushroom and bean salad. You'll need dried white beans, fresh mushrooms, vegetable oil, onion, salt, ground black pepper, and soy sauce.

    Cover the beans with water so they're fully submerged and soak them overnight. Rinse the swollen beans under running water, put them in a clean pot, and cover with fresh water. Bring to a boil, skim off the foam, and simmer over low heat for about 30–35 minutes. The beans should turn soft while still holding their shape and not falling apart.

    Rinse the mushrooms well and trim the ends of the stems. Cut them into medium-thick slices.

    Peel the onion and cut it into small dice. Heat the vegetable oil in a skillet, add the chopped onion, and fry it, stirring, for a couple of minutes.

    Add the sliced mushrooms to the soft, translucent onion.

    Fry the mushrooms with the onion over low heat, stirring. The mushrooms will release some liquid, which both they and the onion cook in. Once it evaporates, take the pan off the heat and let it cool a little.

    Drain the cooking liquid from the beans and let them cool a bit.

    Add the mushrooms and onion to the beans and pour in the soy sauce. Add salt (keeping in mind that soy sauce is already quite salty) and ground black pepper. Stir and serve. You can garnish the salad with chopped herbs to taste. Enjoy!

  • Instead of fresh mushrooms, you can use frozen or canned (not pickled!). The salad is especially tasty and fragrant if you replace the mushrooms, partly or fully, with wild mushrooms. Using store-bought canned beans cuts the cooking time way down. And in place of the onion, you can use leeks for a more refined, delicate dish!
