Nalysnyky (Thin Pancakes)
Golden nalysnyky are the perfect treat for tea time! These thin pancakes can be served with honey, sour cream, or a thick berry or fruit yogurt. For a savory version, roll them around browned ground meat, a vegetable salad, or a sautéed mushroom filling.

Step 1:
Gather the ingredients for these thin nalysnyky pancakes.

Pour the milk (any fat content you like) into a deep bowl, add the water, and crack in the eggs. Add the salt and sugar. Whisk everything thoroughly by hand or with a mixer on low speed.

Add the wheat flour, ideally sifted first, and use a good all-purpose flour. Stir or whisk until the batter is smooth and free of lumps.

Stir a neutral-smelling vegetable oil into the batter, then let it rest for 20 minutes. As it sits, the gluten develops and the batter thickens. After resting, stir it well again, scraping up any flour that settled at the bottom.

Heat a skillet until very hot and grease it with vegetable oil — just for the first pancake. Pour a portion of batter onto the hot pan and swirl to form a round, even pancake. The first one may come out thicker because of the oil in the pan; the rest will get thinner and thinner. The key is to pour the batter onto a hot pan in a very thin layer. Cook for about half a minute, until the edges look dry.

Lift the dried edges with a spatula, flip the pancake, cook for another half a minute, and slide it onto a plate. Cook the rest of the batter the same way, one pancake at a time.

Brush the finished nalysnyky with butter or lard if you like. Serve them hot with an assortment of sweet sauces, fillings, or fruit.
