Chicken, Pineapple, Apple, and Celery Salad

You have to try this salad — you'll love how it turns out. You can make it with boiled or foil-baked chicken, but pan-fried is my favorite. Curry and chicken seasoning give it a special aroma and flavor, apple and celery add crisp freshness, and the pineapple brings a touch of sweetness. Everything comes together beautifully.

Cooking method

    Gather your ingredients. For this chicken salad with pineapple, apple, and celery you'll need: chicken breast, canned pineapple, a celery stalk, a juicy tart-sweet apple (such as Granny Smith), chicken seasoning (optional), mayonnaise, vegetable oil for frying, and salt.

    Rinse the chicken breast, pat it dry, and cut it into strips.

    Season the chicken with salt and pepper, sprinkle on the curry powder, and toss to coat. My chicken seasoning already had ground pepper in it, so I skipped the extra pepper.

    Heat the vegetable oil in a skillet and fry the chicken until cooked through. Transfer it to a plate.

    Drain the pineapple, shaking off the syrup, and cut it into bite-sized pieces. Cut the celery stalk into small, thin pieces as well.

    Rinse the apple well, remove the stem and core, peel it if you like, and cut it into small pieces.

    In a salad bowl, combine the fried chicken, canned pineapple, and the chopped apple and celery.

    Dress the salad with the mayonnaise.

  • To lighten the salad up, swap the mayonnaise for low-fat sour cream (10–15%) or plain unsweetened yogurt. And instead of frying, you can bake the whole chicken breast with the seasoning, then cut it into small pieces. Chicken breast and celery make a satisfying combo thanks to all that protein, so this salad holds its own as a standalone breakfast, lunch, or dinner. You can also add dry-toasted peanuts or shelled pistachios. Beyond the apple, try tossing in kiwi, green grapes, or any bagged salad mix — all of it makes the salad more filling.
