Add sugar, salt, yeast to one third of the flour and dilute with warm milk. Beat the mixture with a whisk and leave for half an hour in a warm place.

Cut the onion into strips, marinate it in vinegar.
We lay out the foil on the table, put two pancakes overlapping on it.
We coat both with a thin layer of beetroot.
Cut the herring into thin plates, put it on top of the beetroot.
On top - pickled onions.
Whisk cream into a foam, add grated apples, horseradish, pepper, salt to them.
Put the resulting sauce on top of the herring, sprinkle with fresh herbs.
Cut the cucumber lengthwise into pieces and put it on the edge of the pancake.
Using foil, wrap the roll and put it in the freezer for 45 minutes.
Pancakes in a fur coat are cut into rolls and served immediately.
