"Freebie" Winter Salad

A super simple winter salad recipe — give it a try and see for yourself! This "Freebie" winter salad lives up to its tongue-in-cheek name: the ingredients are the simplest and cheapest around, the kind you'll find in any fridge. It comes together easily, and there are countless ways to put it to use in the kitchen.

    1. Peel all the vegetables, rinse them well under running water, and pat them dry with a paper towel.
    1. Now cut everything up for the salad. Dice the onion small. Grate the carrots on the coarse side of a box grater (or cut them into thin strips). Cut the stem off the bell pepper, halve it, and remove all the seeds, then slice it into small strips. Cut the tomatoes into small, rough pieces.
    1. Set a medium saucepan on the stove and pour in the vegetable oil. Add all the chopped vegetables at once, then stir in the salt, sugar, bay leaf, and a little mustard — plus any other spices you like. Mix everything well.
    1. Cover the pot and simmer everything together for about 20 minutes.
    1. Press or mince the garlic and stir it into the vegetables. Taste and adjust the seasoning if needed. Cover again and simmer for another 5 minutes or so.
    1. At the end of cooking, pour in the 9% vinegar.
    1. Get your canning jars ready. Wash them well (smaller jars work best) and sterilize them in boiling water or the oven. Boil the lids in a saucepan.
    1. Carefully — so you don't burn yourself — spoon the hot salad from the pot into the clean jars and seal them right away. Set the sealed jars upside down on a flat, sturdy surface and cover them with a blanket to keep them warm. Once the jars have cooled completely, move them to the cellar or another dark, cool spot for storage. Use within a year. "Freebie" salad is a real lifesaver: serve it as a side with chicken or meat, use it as a sauce for spaghetti, braise potatoes with it, or just eat it with bread. Enjoy!
