- Candied peanuts are simple enough that even people who rarely cook can pull them off. I buy peanuts in the shell and recommend the same — the shells are light, come off quickly, and are no real trouble. Put the shelled peanuts in a dry, clean skillet and toast them well until the skins start to crack. Once they're done, let them cool, then rub them between your fingers to slip off the skins. Cleaning them can take a while — about 20 minutes. In a small bowl, stir together the sugar and water. Return the peanuts to the skillet and pour in the sugar-water mixture. Keep the heat moderate and stir the nuts constantly. As the water fully evaporates, the peanuts get an even coating of sugar crystals. To keep them from clumping together, spread them out on a plate in a single layer. The candied peanuts are ready to eat once they've cooled.
