Pancakes with Cheese and Milk
Pancakes are always good, but with a filling they're something special! Add a cheese filling! These are the tastiest cheese pancakes I've ever gotten to try or make. What drew me to this recipe when I first came across it was that the cheese goes right into the batter instead of being sprinkled over the finished pancakes. To my mind, real cheese pancakes are the kind where the cheese is baked into the batter — you have to admit, that just makes more sense. And what to sprinkle on top afterward, each of us can decide for herself, right? I found this one on a site devoted to holiday cooking.

Cooking method
- Sift the flour through a sieve and add the dry yeast. Pour in warm milk (not hot!), beat in the eggs, then add the sugar, salt, and — last of all — the vegetable oil. Set the batter in a warm spot to rise; about half an hour will do. Grate the hard cheese on a fine grater (any store-bought variety works). Stir the risen batter and mix in the grated cheese. Cook the pancakes as usual. One tip: these are best served hot, since the cheese firms them up as they cool. Your cheese pancakes are ready — enjoy!
