Step-by-step cooking
We prepare pancakes with red caviar: mix warm milk and warm water (water makes the dough looser), add yolks ground with butter, sugar and salt. Whisk everything well, add flour, whisk again and add proteins, and then vegetable oil and cognac (for an unsurpassed flavor) and mix everything well again. The dough turns out to be runny like sour cream.
Bake pancakes on a hot and greased frying pan (preferably cast iron) until slightly golden brown.
We lubricate the finished pancakes with butter and cover them with a lid and put them in a warm place for 5 minutes.
Ready-made pancakes can be folded into envelopes or horns and do not forget to put red caviar in the middle. You can decorate such a dish with basil or lettuce leaves.
