Sweet Cream Crêpes with Milk

Airy crêpes — and with a drizzle of condensed milk, they're something else! This is my favorite sweet crêpe recipe. There are tons of crêpe recipes out there, but for some reason "sweet crêpes" usually just means plain ones wrapped around a sweet filling. You can skip all that by simply adding sugar right to the batter. That works better for me — I make crêpes for breakfast and don't want to fuss with a filling. This way they're quick and done: everyone's happy, and it's easy for me to pull off. Breakfast is always a headache — you never know what to make that's fast, simple, tasty, and filling enough to carry everyone to lunch. Give my sweet cream crêpes a try; your family will thank you, and you'll still have time for yourself.

  • Cream the butter with the egg yolks and add half the milk. Stirring constantly, work in the sifted flour. Slake the baking soda with a little vinegar and stir it into the batter. Keep beating, then add the sugar and the rest of the milk. In a separate bowl, whip the egg whites with the cream, then gently fold them into the batter. To save time you can skip that step — leave out the cream and just beat the whole eggs in with the yolks. Fry the crêpes quickly. If you make the batter a bit thicker, you'll get little pancakes instead — also great for breakfast.
