10-Minute Skillet Pizza with Ham and Mushrooms

A quick pizza the whole family will love. This one's a little different and comes together fast — cooked in a skillet, it turns out juicy and tender. Perfect for when friends are dropping by or you need to pull together breakfast for the family.

    For this quick pizza you'll need a skillet about 11 inches (28 cm) across the bottom. If yours is smaller, just scale down the amounts.

    For the base, whisk the eggs, sour cream, and mayonnaise together in a deep bowl until smooth. Gradually add the flour, one level tablespoon at a time, whisking into a thin batter.

    Grease a cold skillet with vegetable oil and pour in the batter. Spread ketchup over the wet batter, then add the rest of your toppings. I use sliced mushrooms, ham, and tomatoes, scattered on however you like.

    Once the mushrooms, ham, and tomatoes are on (I season the tops with salt and ground black pepper), cover everything with grated cheese. Set the skillet on the stove: start on high for 2 minutes to set the base, then turn the heat to low, cover with a lid, and cook until the cheese melts, about 8–10 minutes.
