Vanilla Syrniki in a Silky Honey-Cream Sauce

Fast, easy, wildly delicious — and okay, a little indulgent :). Tender, fluffy syrniki (cottage cheese fritters) bathed in a fragrant honey-and-sour-cream sauce. They take me straight back to childhood. So good you won't be able to stop.

    My cottage cheese is 5% fat. Don't use anything too rich, or the syrniki will spread while frying. I always use just the yolks in my syrniki. Adjust the sugar to taste, but remember there's a sweet sauce coming too. You can swap the flour for semolina (2 tablespoons, set aside for 30 minutes to swell). You may need a little more or less flour — it all depends on the cottage cheese.

    Combine the cottage cheese, salt, sugar, vanilla, and yolks, and mash to a smooth mixture with a potato masher.

    Then add the flour and mix well. This is the curd mixture I ended up with — it doesn't spread and holds its shape nicely.

    Divide into 12 pieces, roll each into a ball, coat well in flour, and shape into a puck using a knife. I love this trick — I saw it online somewhere. You just roll the syrnik against the side of the knife, turning it all around. Hard to explain any better! Maybe everyone already knows this but me :)

    Now my syrniki always come out even and pretty, every single one.

    Fry in vegetable oil until golden brown on both sides.

    Transfer them to a deep dish and start on the sauce.

    Combine the sour cream, honey, and butter and set over the heat.

    Warm it, stirring, until smooth — don't let it boil. (If you use sugar instead of honey, heat just until the crystals dissolve.) The sauce is ready.

    While it's still warm, spoon it over the syrniki. And there you have it — a truly simple but seriously delicious dish. They may look like ordinary syrniki, but with this sauce they're absolutely irresistible!
