Salad with Canned Red Beans and Chicken

Step 1:
How do you make a red bean salad? Gather your ingredients. You can boil the chicken breast in advance or use leftover chicken from another dish. The beans and corn are canned. Use one large bell pepper or two small ones, and a red salad onion. To dress the salad, use the suggested dressing or just olive oil. Salt to taste, and you can add ground black pepper too.

Take a deep bowl or salad bowl. Cut the chilled boneless chicken breast into small cubes and put it in the bowl.

Carefully open the can of red beans, drain the liquid, and rinse the beans with cold water. Add the amount of beans you want to the bowl. You can also use cooked red beans for the salad.

Carefully open the can of corn and drain the liquid. Add the amount of corn you want to the bowl.

Wash the red bell pepper, cut out the stem, and remove the seeds. Rinse it inside and out with cold water. Shake off the excess water and cut the pepper into small cubes. Add the chopped pepper to the salad.

Peel the salad onion and cut it into small cubes. Add it to the salad.

Rinse the fresh parsley under cold running water and dry it. Chop the herbs finely and add them to the salad. You can also add dill, cilantro, or a mix of fresh herbs to taste.

For the dressing, mix vegetable oil (I used grapeseed) with apple cider vinegar and prepared mustard (mine is Russian, but it's also delicious with Dijon) in a bowl. You can add the salt and ground black pepper to the dressing or straight into the salad. Dress the salad with the prepared dressing and toss. Taste it again for salt and add more if needed.

You can serve the finished salad right after making it, but its flavor will be richer if it sits in the refrigerator for a while before serving. You can offer the salad as a dish in its own right, or use it to round out a meal of potato dishes.
