Step 1:
Prepare the ingredients. To cook an avocado with an egg in the oven, we will need: large ripe avocado; eggs preferably not large, category C2; Provencal herbs; ground black pepper and salt.
Step 2:
Cut the avocado in half and remove the stone. If avocados are not stable, you can cut off the bottom of them. With a spoon, carefully remove part of the pulp, trying not to damage the walls and bottom of the fruit.
Step 3:
Break an egg into each avocado half. I had large eggs, but avocados are not very large and part of the protein from each egg turned out to be superfluous. Therefore, it is better to estimate in advance whether the whole egg will fit into the fruit you have chosen.
Step 4:
Put the avocado in a preheated 180 °C oven and bake for about 10-15 minutes until the eggs are ready.
Step 5:
Transfer the hot avocado with egg to a dish, sprinkle with Provencal herbs, salt and pepper. Serve immediately while the appetizer is hot. Enjoy your meal!
This recipe has a lot of options: in addition to eggs, you can add pieces of bacon or tomatoes to the avocado. I suggest a basic option.
And you can diversify the snack according to your taste.
When I tried the avocado and egg combination for the first time last December, I just fell in love with it. I am indifferent to breakfast - in the morning, apart from a cup of coffee or tea, I usually don't want anything. However, everything changed when I made the first avocado sandwich with scrambled eggs and herbs. The next in line was a sandwich with fried avocado slices and a poached egg (these recipes are in my cookbook). It seemed to me that there was simply nowhere tastier. But eggs baked in avocado halves and sprinkled with herbs are just a culinary dream! This dish is made quickly. Which is very important in the morning. I broke the eggs in an avocado, put them in the oven and went to wash/ get ready. And in 15 minutes you will get a nutritious and delicious breakfast. Fast, healthy, satisfying and very tasty. Now my breakfast problem is solved.
