Zucchini for the dish is better to use young, they contain more vitamins, and you can use them for the dish without peeling and pith with seeds. But if the zucchini is mature, then it will not affect the taste particularly, you just need to wash it, clean it and grate it like the previous vegetables, the juice needs to be squeezed out, since this vegetable secretes a lot of juice.
