French quiche pie with baked vegetables

A hearty and healthy pie - and I want to eat it as soon as possible! Kish pie turns out to be very tasty and tender. The husband called it "Feminine", well, or "Dietary", so I boldly ate it with meat:) and I really liked the pie by itself!

Step-by-step cooking

Cooking time: 1 h 15 min
  1. Step 1:

    Step 1.

Let's start with the filling. Turn on the oven to warm up to 200C. Vegetables and mushrooms are washed, dried.

  2. Step 2:

    Step 2.

Cut eggplant and zucchini into circles (or plates), salt, pepper, if desired, you can sprinkle vegetable oil.

  3. Step 3:

    Step 3.

Spread the vegetables and mushrooms on a baking sheet and bake until tender (about 15-20 minutes). While the vegetables are baking, let's do the dough.

  4. Step 4:

    Step 4.

    Take the right products.

  5. Step 5:

    Step 5.

Sift flour with salt and rub it with butter into crumbs with quick movements, for convenience, butter can be cut into a small cube.

  6. Step 6:

    Step 6.

Add cold water and a few drops of lemon juice to the cream crumbs, knead the dough. The dough does not need to be kneaded for a long time, the main thing is to collect everything in a lump. The finished dough is placed in a bag and sent to the refrigerator for 20-30 minutes.

  7. Step 7:

    Step 7.

Meanwhile, our vegetables are ready, we put the peppers in a bag for 10 minutes so that they sweat.

  8. Step 8:

    Step 8.

After we peel off the skin from them, we do the same with the tomato. Peeled peppers, tomatoes and mushrooms are cut.

  9. Step 9:

    Step 9.

Make the filling, beat the eggs lightly with a fork, add cream, salt and pepper, you can also crumble the feta here, but I add it separately to the vegetables.

  10. Step 10:

    Step 10.

Roll out the cooled dough (thickness about 5 mm), put it in a mold. We spread our filling on the dough in layers, sprinkle each layer with feta. We start with eggplants

  11. Step 11:

    Step 11.

    Then we spread the zucchini.

  12. Step 12:

    Step 12.

The next layer is mushrooms and peppers.

  13. Step 13:

    Step 13.

    We finish with feta.

  14. Step 14:

    Step 14.

Fill our pie with filling and bake in preheated to 180-190C until ready for about 25-35 minutes.

  15. Step 15:

    Step 15.

    Bon appetit!

I think you should also know how to bake a French quiche pie with baked vegetables in another way. To do this, roll out the dough, cover it with baking paper, pour beans or peas (all this is done so that our dough does not blow up when baking) and in this form we bake our base at 180 C for 15 minutes. Then we remove the entire structure from above and bake for another 5 minutes. After our base is ready, we spread the filling, fill everything with filling and bake the cake completely. This method will make the base crispy, since the filling is moist, but I'm lazy and did it in a simpler way. And, in order not to play with baking, you can put the vegetables in a frying pan, but this will not be an easy option, but it is also very tasty. Feta can be replaced with cheese or any other favorite type of cheese. Choose your option!
