Tiramisu with Cream and Mascarpone

  1. Step 1:

    Cream with 33-35% fat (sometimes labeled "whipping cream") needs to be whipped cold. I chill the bowl I'll be whipping in ahead of time too. And what's more, I keep the whisk in the fridge for a while before whipping as well.

    Add all the powdered sugar to the cream gradually, in batches, and beat the mixture to soft peaks.

    After that, fold in the mascarpone - not all at once, but in several additions, using a spatula. Do it gently, folding the cheese in from the bottom up and from the edges toward the center, to work even more air into the mixture.

    Brew fresh coffee beforehand. I use one serving of americano plus two shots of espresso (for strength). The coffee should have time to cool so it doesn't burn your hands. If you like, you can add a strong aromatic liquor to the coffee, if that's acceptable to you.

    For convenience, you can spoon the cream-cheese mixture into a piping bag. Cut the tip straight across, about 1.5-2 cm in diameter.

    Let's start assembling the dessert. Dip the ladyfingers in the coffee for about 2 seconds on each side. Be careful not to soak them too long, because these light egg cookies absorb liquid very quickly and the dessert risks turning soggy - which, together with the whipped cream, won't look very appetizing.

    Lay half of the coffee-soaked sponge fingers in a layer on the bottom of the dish. Spread half the cream over them, smoothing it carefully. You can do this with an ordinary spoon. Lay the second layer of coffee-soaked cookies on top of the cream. Then finish the dessert nicely with the remaining half of the cream.

    Traditionally, this dessert is finished with cocoa powder on top. To get the cocoa to spread evenly over the surface, I dust it through an ordinary fine sieve. Put the tiramisu in the fridge to set. It's best to let the dessert rest there as long as possible, but at least 4 hours.

  • Tiramisu is a true Italian classic. I make this dessert in a slightly modified form, because the original cream includes raw eggs. But even without them, tiramisu is absolutely wonderful. In Italy, every self-respecting trattoria believes the best tiramisu is made right there. This airy dessert seems made to lift your spirits! Naturally, its best companion is a strong, thick espresso.
