No-Condensed-Milk Anthill Cake from Cookies

A simple, quick cake to make for tea! The "Anthill" cake made from cookies was a popular treat in Soviet times. But condensed milk was sometimes hard to find, so some home cooks made this cake with a sour cream filling. The taste is every bit as good as the classic "Anthill."

    Make the filling for the cake. You can use sour cream of any fat content, but thick, fresh, natural sour cream is best. Put the sour cream in a deep bowl, add the sugar, beat in the egg, and add the softened butter. Beat the ingredients with a whisk until smooth. Add a pinch of vanilla for a pleasant aroma and a couple of tablespoons of cocoa. Mix and set the bowl over a water bath.
