Gordon Ramsay's Potato Gnocchi
A versatile meal from yesterday's potatoes! Economical and delicious! Potato gnocchi are a classic of European and American cooking. Gordon Ramsay makes his gnocchi with ricotta, pan-frying them and adding a couple of refined touches.
Cooking method

Step 1:
Cut the baked potatoes in half.

Scoop out the flesh with a spoon.

Step 3:
Mash the potatoes. A fork, a masher, or a potato ricer like Mr. Gordon's will do.

Step 4:
Add the ricotta to the mashed potatoes (you can swap in thick sour cream here), and salt and pepper. Add the flour (sifted).

Step 5:
In a separate bowl, beat the egg.

Step 6:
Knead the dough.

Step 7:
Divide the dough ball in half.

Step 8:
Roll it into a rope and cut it into gnocchi.

Step 9:
Press a dimple into each with your finger. You can use a fork to give the gnocchi ridges.

Step 10:
Drop the gnocchi into hot water with oil and salt and cook until they float to the top.

Step 11:
Transfer them to a skillet with oil and fry until crisp (but not so long that they dry out).

Step 12:
On both sides.

Step 13:
Add the peas.

Step 14:
And the butter.

Step 15:
Fry, adding the lemon zest as you go. Transfer to a platter and dust with finely grated parmesan.
