Step 1:
To prepare this dish, we will need mussels, garlic, soy sauce, spinach, chili pepper and ground black pepper. Mussels must first be defrosted, for this you need to pour them into a bowl and put them in the refrigerator. When the mussels are thawed, they must be transferred to a colander and rinsed very thoroughly under strong pressure of cold water, as they may contain sand.
Step 2:
First you need to peel the garlic from the husk and cut into thin plates. Put them in a frying pan, add vegetable oil and fry until a fragrant smell appears. After that, the fried garlic plates can be removed from the pan, or you can not remove them.
Step 3:
Then put the thawed mussels in the pan and start frying them in fragrant oil. First, the mussels will release a lot of water, it must be evaporated over high heat. After the liquid has evaporated, lightly fry the mussels, reducing the heat to medium.
Step 4:
Pour soy sauce into lightly fried mussels, add ground black pepper to taste and continue frying the mussels for another 5 minutes.
Step 5:
For a beautiful serving on the table, put green spinach leaves on a cast-iron frying pan, then put the mussels fried in garlic oil in soy sauce and decorate the dish with rings of hot red chili pepper.
Use oil with a high smoking temperature for frying! Any oils are useful only until a certain temperature is reached - the point of smoking, at which the oil begins to burn and toxic substances, including carcinogens, are formed in it.
Unrefined oils, with rare exceptions, have a low smoking point. There are a lot of unfiltered organic particles in them, which quickly begin to burn.
Refined oils are more resistant to heating, and their smoking point is higher. If you are going to cook food in the oven, on a frying pan or grill, make sure that you use oil with a high smoking point. The most common of the oils with a high smoking point: refined varieties of sunflower, olive and grape.
Oysters, shrimps, crayfish, scallops, mussels, octopuses and other seafood used to be considered a delicacy. But today, more and more often these delicacies appear on the tables of ordinary people. Seafood is very popular in Spanish, Italian and Chinese cuisines. So, many Russian housewives cook Spanish paella, Italian pasta with white sauce and seafood, Chinese dumplings with shrimp and so on.
