Let's prepare butter dough on kefir without yeast. The dough will definitely turn out airy and lush, but subject to several subtleties. Firstly, all the ingredients for the dough should be warm, at least at room temperature (kefir will still need to be warmed up a little), but not hot. Kneading such a dough, unlike yeast, must be done very quickly, otherwise the dough will be tight, and the products are firm and not lush. Thirdly, kefir dough, as well as yeast dough, should be given a little rest after kneading, but, of course, not so much time, 20 minutes will be enough. Fourth, dough products before baking them, so that they turn out not only rich and airy, but also beautiful, you need to remember to lubricate with beaten egg.
Knead the dough. In a large bowl, pour the dry ingredients: sifted flour, sugar, salt and soda. It is thanks to soda that a rich, fluffy dough on kefir is obtained, even without yeast, so it should not be forgotten in any case. Mix the ingredients.
Kefir is heated a little in the microwave, but 15 seconds at maximum power is enough, it cannot be allowed to become cold or just become hot. Pour kefir and vegetable oil into a bowl with dry ingredients, knead the dough. We do this very quickly, the dough should turn out soft and not tight. Roll it into a ball, put it in a bowl, cover it with cling film and leave it on the table for 20 minutes. In the meantime, you can do stuffing or cream for buns, if you plan to use such. After the specified time, we proceed to the molding and baking of buns.
