- This marinade recipe is a complete departure from the traditional ways of marinating smoked salo. The main ingredient here is soy sauce, which gives the finished pork a slight Asian flavor. First, peel the garlic, break the head into cloves, rinse them well under running water, and dry them. Next, finely chop the garlic into small cubes with a knife. Mix the resulting garlic paste with ground black pepper (it's best to grind it yourself before cooking) and any dried spices you like (ground paprika, red pepper, turmeric, basil, cumin, and others). Grind the mixture thoroughly and stir until smooth. Pour the soy sauce into the mixture of spices and chopped garlic. Since soy sauce is itself a fairly concentrated and very salty product, no salt is used in this recipe at all. That said, after tasting the finished marinade, you can adjust it to your liking and add ingredients as you wish. Pour in the vegetable oil (refined sunflower or olive oil both work — it doesn't really matter, so go by your own taste). Mix everything together well again. For a better consistency, you can use a whisk and beat the marinade a little. The finished marinade can be used right away — namely, thoroughly coat pieces of salo with it on all sides. For the salo to marinate better in the sauce, it's a good idea to wrap each piece in plastic wrap. Then refrigerate the pork for two days. Once the salo has marinated long enough in the sauce, you can go straight to smoking it. Happy cooking experiments!
