Fresh Cabbage, Carrot, and Cucumber Salad
Light, tasty, simple, summery-fresh, and vitamin-rich! You can make this fresh cabbage, carrot, and cucumber salad in 10 minutes. Serve it any time of day — as an appetizer, a snack, a light breakfast, or dinner. It pairs well with fried or roasted meat, chicken, and fish.

Step 1:
How do you make cabbage salad with carrot and cucumber? Gather the ingredients you'll need. Remove the top 2–3 leaves from the cabbage. Wash any dirt off the cucumber. Peel and rinse the carrot.

Finely shred the fresh cabbage with a sharp knife and scrunch it a little with your hands. Why scrunch it? It's to make the cabbage softer and juicier in the salad.

Transfer the shredded cabbage to the bowl you'll make the salad in. Cut the cucumber in half lengthwise and slice it. If the cucumber is large, you can first cut it lengthwise into 4 pieces. Add the sliced cucumber to the cabbage.

Grate the peeled carrot on a coarse grater and add it to the salad bowl.

Dress all the ingredients with a little vegetable oil and lemon juice.
