"Africa" Salad — Kiwi, Chicken, Apple, Cheese, and Egg
Chicken with fruit is a classic combination. There are several versions of this salad out there. I'd originally wanted to add a banana, as some recipes suggest, but didn't risk it — I was making the salad in the morning for that evening, and by then the banana would have darkened and lost half its flavor, so I stuck with just kiwi and apple. The combination of chicken, fruit, and Korean-style carrots really won me over, despite how unlikely it sounds.

Step 1:
Gather the ingredients.

Step 2:
Boil the chicken breast in salted water until cooked and cut it into small cubes.

Grate the cheese on a coarse grater.

Hard-boil the eggs, then cool, peel, and separate the whites from the yolks. Grate the whites on a coarse grater and the yolks on a fine one.

Step 5:
Peel the kiwi and cut it into half-moons, reserving a few pieces for garnish. Peel and grate the apple.

Layer the salad in a bowl, spreading mayonnaise between the layers: first the chicken,

then the kiwi,

then the egg whites,

then the apple,

Step 10:
then the cheese,

Step 11:
and finally the Korean-style carrots.

Step 12:
Pipe a lattice of mayonnaise over the top.

Sprinkle with the grated yolks.

Step 14:
Make a rose from the reserved kiwi. Chill the salad in the refrigerator for 30 minutes so the flavors meld.
