Step 1:
How to salt honeydew for the winter in jars? Prepare everything you need. It is better to take fresh leaves and dill, but even in dried form they do not lose their flavor at all. If you do not like any spices, you can refuse them or replace them with others. My family doesn't really like allspice, so I usually put Sichuan pepper.
Step 2:
Cut off the roots of the honey mushrooms, wash them well and let the water drain completely. I soak the honeydew in cold, salty water for 2-3 hours, but this is not necessary. Especially carefully make sure that the earth does not remain, because it is with it that you can bring the disease botulism, which can lead to a fatal outcome. And if you are also not sure about mushrooms, it is better to refuse, no mushroom is worth a human life.
Step 3:
Put the mushrooms in a saucepan and cover with cold water. Add salt to the water (add 1 tablespoon of salt to 1 liter of water) and cook for 30 minutes. Then flip into a colander and rinse with cold water, let the water drain completely.
Step 4:
Put everything for the marinade in a saucepan with a thick bottom and pour in water. Take coarse salt, since fine salt is easy to over-salt, and iodized salt can lead to an explosion of cans. Put on medium heat and bring to a boil.
Step 5:
Put the boiled mushrooms in a saucepan and cook over low heat, after boiling, for 25 minutes, the finished mushrooms should sink to the bottom. Remove from heat and cool.
Step 6:
Wash the jars and lids thoroughly with mustard or baking soda and rinse thoroughly. Boil the lids for 10 minutes, and sterilize the jars in any convenient way. It can be steam, an oven or a microwave oven. I sterilized in a microwave oven for 4 minutes, at full power, pouring 2 centimeters high water into cans.
Step 7:
Arrange the finished mushrooms in jars so that they are completely covered with brine and immediately roll up. Put it away for storage in the refrigerator or cellar. The honey mushrooms will be ready in 4 weeks.
