Cherry Plum Jam with Pits for Winter

A very tasty, beautiful cherry plum jam with the pits left in. Cherry plum is a fruit much like a plum in look and taste. The one catch: unlike a plum, its pit is very hard to separate from the flesh, so cooks usually make cherry plum jam with the pits in. The jam comes out even tastier that way—the cherry plums stay nearly whole and the syrup is clear. Cherry plums come in different varieties and colors depending on where they grow, and any of them make a very tasty jam. There are many ways to cook it; the best is a quick one, where the fruit spends less time over heat, keeping more of its nutrients.

Cooking method

    Prep the ingredients for the jam: cherry plums, sugar, and water. Use any cherry plums you have or prefer—yellow or red—but make sure they're nice and ripe and sweet.

    Sort the cherry plums, removing any damaged or rotten fruit and debris. Rinse them under running water and drain in a colander. Bring a pot of water to a boil and lower the colander of cherry plums into it (use a metal or heatproof silicone colander; plastic may melt). Hold the fruit in the boiling water for about 5 minutes, then lift it out.

    Then prick each cherry plum with a toothpick so it doesn't burst when you pour the syrup over it, if you want the fruit to stay whole. But even if they fall apart while cooking, the flavor won't suffer—only the look changes. It'll actually be easier to pull out the pits as you eat the jam.

    Make the sugar syrup. Pour the water into a pot and add the measured sugar. Bring to a boil, stirring, until the sugar fully dissolves, then turn off the heat.

    Transfer the cherry plums to a non-reactive metal pot, pour the syrup over them, and leave at room temperature for 3 hours. Then set over the heat, bring to a boil, and cook for about 30 minutes over medium heat.

    Pack the jam into sterilized jars prepared ahead of time and seal them. Let the jam cool and store it in the pantry for winter.
