  • The most time-consuming part of this salad is the eggs, so to save time on dinner it's best to boil them ahead. Don't leave them to cool in the open air, even if you're not in a hurry—drop the just-boiled eggs into ice water until fully cooled. That way the shell peels off easily, the eggs stay whole, and the cut pieces look neat. The salad itself takes no special skill—just chopping and dressing. Start with the eggs: cut them into small cubes and put them in a deep bowl. Cut the ham and cheese into cubes too. It's best not to cut them too large, so the salad stays tender, and uniform cubes give the finished dish a presentable look for a special occasion. Drain the pickled mushrooms in a colander and let them sit a bit—the salad doesn't need extra liquid. Before using them, it's a good idea to blot the mushrooms with paper towels to soak up any excess. Cut the prepared mushrooms into neat, even cubes. Do the same with the peas: drain them in a sieve and, once the liquid runs off, pat them dry with paper towels. Add the peas and the chopped mushrooms to the bowl with the salad. Rinse the green onion under running water, dry it, and finely chop it; add it to the salad. Season with salt and ground pepper to taste—no other spices are recommended, since the finished salad already has a rich, pronounced flavor. Add the mayonnaise and mix the salad well. It's best to cover it and chill it in the fridge for at least 30 minutes. Then take it out, mound it on a nice plate, garnish with a sprig of dill, and serve. Enjoy!
