Chicken Pelmeni Made with Milk

Homemade pelmeni with chicken breast filling—a real treat! Making pelmeni does take a while, but having a batch in the freezer is a lifesaver: just boil them and dinner is ready. And to make the pelmeni tastier and softer, it's best to knead the dough with milk.

    1. Make the pelmeni dough: put the flour in a bowl, add the salt and egg, and pour in the milk. Knead the dough thoroughly by hand, form it into a ball, cover it with plastic wrap, and set it aside while you make the filling. 2. You can use ready-made store-bought ground meat for the filling, or grind your own, which tastes much better. Ground chicken breast isn't fatty, but with raw onion mixed in, the filling turns out soft and juicy. Cut the chicken breast into pieces and run it through a meat grinder. 3. Don't grind the onion—it would lose its juice—so cut it into very small cubes instead. 4. Mix the ground chicken with the chopped onion, season with salt and pepper, and mix well. 5. Roll the dough out thin with a rolling pin on a floured surface and cut out rounds with a small glass. 6. Put a little chicken filling in the center of each round with a teaspoon and form the pelmeni. 7. Set the shaped pelmeni on floured boards. If you're making them ahead, put the boards of pelmeni in the freezer until frozen, then transfer them to a bag and keep them in the freezer. 8. Drop fresh or frozen pelmeni into boiling salted water and cook for about 7 minutes; they're done when they float to the surface. 9. Serve the chicken pelmeni hot, with sauce, sour cream, and vegetables.
