Chicken, Mushroom, Tomato, and Cheese Salad

It has just a few ingredients that go together harmoniously. Anyone can make this salad — it's easy and quick.

Step 1:
How do you make a tasty salad with chicken, mushrooms, tomatoes, and cheese? Gather all the ingredients. Use fillet from any part of the chicken — breast works best. Choose small, juicy but firm tomatoes. Soft ones don't hold their shape well; as you cut them they'll fall apart into a shapeless mush and spoil the look of the salad. Use medium button mushrooms, snow-white with no spots, damage, or smell of rot. Any soft cheese will do.

Step 2:
Rinse the mushrooms thoroughly to remove any soil, under warm or cold running water. Cut out any bad spots. Tiny mushrooms up to 2 cm don't need peeling at all — just rinse them well. Peel the films off the larger mushrooms.

Rinse the chicken fillet under running water, put it in a pot of water, and bring to a boil. Cook over medium heat for 20 minutes after it boils. Then drain the water and let the chicken cool completely. Boil the mushrooms for 10 minutes after the water boils and cool them too.

Wash the tomatoes, remove the stems, and cut them into medium slices.

Cut the cheese into medium cubes.

Cut the cooled mushrooms lengthwise through the stem into several pieces about the same size as the tomatoes.

Cut the cooled chicken fillet into medium slices across the grain.

Make the dressing. Gather the ingredients for it. You can make the lemon juice yourself by squeezing it from a lemon. Instead of black pepper, you can use a pepper blend; the dressing tastes better with freshly ground pepper. Any herbs will do — spinach, cilantro, dill, parsley, and others.

In a small deep bowl, mix the oil and lemon juice and add pepper and salt. If you used salted cheese in the salad, don't salt the dressing.

Remove any wilted leaves and tough stems from the herbs, rinse, and dry them.

Mix all the ingredients together and taste the salad.
