Mashed Potatoes Without Milk

- Just a couple of simple steps and a delicious side dish is on your table:
- peel and wash the potatoes, then cut them into halves or quarters depending on size;
- put them in a saucepan, add water to cover, season with salt, and set over the heat;
- cook for about half an hour, until fully tender, then drain off the cooking liquid;
- mash the potatoes, adding a pat of butter;
- warm the cream in the microwave until lukewarm, pour it into the potatoes, and whip the mixture with an immersion blender;
- grate the hard cheese, add it to the mashed potatoes, and stir vigorously with a spoon.
- Serve the mash on individual plates, sprinkled with herbes de Provence.
