Slow-Cooker Borscht with Chicken
Fragrant borscht tastes even better from the slow cooker! Borscht is our family's favorite soup, and no wonder — it's so fragrant and delicious! Here's my recipe for making it; it turns out absolutely wonderful!

- Wash the chicken drumsticks and pat them dry with paper towels. Pour the vegetable oil into the slow-cooker bowl, select the "Fry" program, and brown the drumsticks on all sides for 15 minutes (turning them now and then, of course).
- Now for the vegetables: peel the potatoes, onion, carrots, beets, and garlic, and wash them well under running water. Cube the potatoes as usual, grate the carrots and beets, and dice the onion small.
- Once the drumsticks are browned, add the prepped carrots and beets (set aside about 2 tablespoons of beet) and the onion to the bowl, switch the program to "Soup," pour in the hot water, season with salt, and add the bay leaves. Cook for 10 minutes.
- Shred the cabbage and add it to the borscht along with the potatoes and garlic (press the garlic or chop it — doesn't matter here); cook for another 10 minutes.
- About 5 minutes before the end, add the reserved beet, sprinkle in the sugar (don't add it all at once — go little by little, adjusting to taste), and pour in the vinegar.
- Let the finished borscht rest, covered, for about 10 minutes, then serve garnished with a sprig of dill.
- Delicious with croutons!
