Cottage Cheese Vareniky on Kefir Dough

A wonderful dish for dinner or an afternoon snack for your family! Vareniky (filled dumplings) with cottage cheese are so good! My kids and husband simply adore them. I make the dough with kefir, which keeps it soft and tender. Cook along with me!

    1. Pour the kefir into a bowl, crack in the egg, add the sugar, salt, and baking soda, stir, and let stand for 3-5 minutes.
    1. Sift in the flour a bit at a time and knead the dough until it stops sticking to your hands, then cover it with plastic wrap and let it rest for 15 minutes.
    1. While the dough rests, make the filling. Press the cottage cheese through a sieve into a bowl, add the sugar, the egg yolk, and a pinch of salt, and mix the filling.
    1. Divide the dough into a couple of pieces (easier to work with), roll one into a rope, cut it into equal pieces, and roll each one out with a rolling pin into a round.
    1. Spoon on the filling and shape the vareniky, using up all the dough (if you end up with more than the family can eat, freeze some to cook another time).
    1. Boil the vareniky in boiling water; once they float to the surface, give them about 3-4 minutes, then lift them out with a slotted spoon.
  • Serve on a large platter, garnished with raspberries.
