Millet Krupenik Porridge with Raisins

A very tasty, thick porridge that's loaded with vitamins! I make this millet krupenik with raisins all the time.

  • First I melt the butter and mash the cottage cheese with the eggs. I rinse the millet and the raisins. I cook the millet in milk in a large pot, and once it's cooled, I stir in the butter, raisins, sugar, and cottage cheese, season with a little salt, and mix everything thoroughly. I spread the smooth mixture into a baking dish that I've greased and dusted with breadcrumbs. I preheat the oven and bake the millet krupenik for half an hour. When I bring the dish to the table, I set a big wooden bowl of sour cream in the center so everyone can spoon as much over their portion as they like. If you're not feeding a big crowd, you can scale the ingredients down by half or so. That's usually what I do — but the recipe was written for big Russian feasts. I came across it in a reprint of an old Russian cookbook from the early 1900s that I'd picked up on a whim at a newsstand.
