Fried Suluguni with Tomatoes

Here's an interesting breakfast to serve your family. This piece of suluguni was actually meant for making Adjarian khachapuri. But my husband asked for something out of the ordinary for breakfast, and I remembered I'd been meaning to try this recipe. It took hardly any time, and the flavor came out absolutely fantastic. Any cheese lover will enjoy this one.

    Gather the ingredients. For fried suluguni with tomatoes you'll need: suluguni, tomatoes (Roma work best), parsley, a little vegetable oil, ground black pepper, and salt.

    Wash and dry the tomatoes and cut them into rounds about 1/4 inch (5 mm) thick. Roma tomatoes are best here — they're smaller and firm, so they won't fall apart while frying and will hold their shape.

    Cut the suluguni into slices about the same thickness as the tomatoes. They can be any size or shape, since it'll all melt together into one layer in the pan anyway.

    Wash and dry the parsley and pull the leaves from the stems. You can also chop the herbs finely with a knife. Besides parsley, you could use dill or cilantro.

    Heat the vegetable oil in a skillet, add the tomatoes, and fry over medium heat for 1–2 minutes per side. Carefully lift the tomatoes out of the pan.

    Lay the suluguni slices in the skillet in a single layer. Arrange them as close together as possible so there's not much space between them, so pick a pan sized to the amount of cheese.

    Once the cheese starts to melt, spread the fried tomatoes over the top. Fry everything together for 1–2 minutes, until the cheese is fully melted.

    Season with salt and pepper, sprinkle with the parsley leaves, and serve right away.

  • On the surface, this dish looks a lot like an ordinary tomato omelet. That's what my husband thought at first when he saw it, and he was a little let down: "I asked for something unusual and tasty, and here's an omelet again..." In the end, though, he was really pleased. I think these little surprises — expecting one thing and being delighted by another — make the best start to the day.
