    How do you pan-fry king prawns? Gather your ingredients. Instead of a shallot, you can use a small regular onion. And in place of lemon, lime works beautifully — it gives the dish a special aroma.

    Thaw the king prawns at room temperature and clean them (remove the shell, heads, and tails). Rinse the prawn meat well, make a shallow cut down the back of each one, and remove the dark vein.

    Peel and finely chop the garlic.

    Peel the shallot and chop it as finely as possible.

    Add both the vegetable oil and the butter to the skillet — the oil keeps the butter from burning. Add the garlic and shallot. And don't forget the herbs; use whatever you like. Dill (dill fronds), rosemary, and thyme all pair wonderfully with prawns.

    Set the skillet over medium heat and sauté the shallot and garlic, stirring constantly. Once they turn slightly translucent, crank the heat up to high.

    Add the prawns and soy sauce to the pan right away. You could use a small pinch of salt instead of soy sauce, but to my taste the sauce gives the dish a savory depth.

    Frying over high heat and stirring constantly, cook the prawns until the soy sauce has cooked off. They should turn pink and curl up. Squeeze lemon or lime juice over them and toss. The key here is to pull the prawns off in time — overcook them and the meat turns rubbery and tough.

    Take the finished prawns off the heat, arrange them on a plate, and give them another squeeze of lemon or lime juice on top. Sprinkle with allspice if you like. Garnish with a citrus wedge and fresh herbs, and serve. Enjoy!

  • Fried king prawns are delicious both hot and cold. Serve them with a glass of off-dry wine.
