Fried Pork Patties

Wonderful, juicy, fragrant meat patties! Classic ground-meat patties are usually pan-fried. It's a simple, familiar dish, but at the same time really tasty and filling. Kids love them, especially when there are no visible bits of onion — which this recipe takes care of, since the onion is blended right in. And that onion is exactly what gives the patties their remarkable juiciness and tenderness, so be sure to include it — the more, the better. You can use day-old bread that's dried out a little; it soaks up the milk just the same.

  • You can use store-bought ground meat for the patties, but it's better not to cut corners and grind it yourself. It only takes 15–20 minutes, and the result is worth it — even faster with an electric grinder. Grinding it yourself also means you know exactly what's in it. You can trim the fat off the meat or leave it — that's up to you. Refined sunflower oil is best, though any vegetable oil works, not just sunflower. Homemade patties like these are perfectly fine to give to kids. 1. Put the ground pork in a bowl — make sure it's deep enough. 2. Peel the onion and garlic and blend them to a pulp. If you don't have a blender, grate them on a fine grater or run them through a meat grinder. 3. Put the piece of white bread in a small bowl and pour a little milk over it (water works instead of milk). 4. Squeeze the excess liquid out of the bread with your hands and add it to the meat, along with the blended onion and garlic. 5. Season with salt and pepper to taste and mix by hand. It's really important to mix the meat well so the patties hold their shape. 6. Now, with wet hands, shape the patties and dredge them in flour. 7. Fry the patties in sunflower oil for 5 minutes, then flip them, cover the pan, and cook for another 10 minutes. Serve with any side dish you like — a simple fresh vegetable salad rounds it out nicely. Enjoy!
