- Shred the cabbage and grate the carrots on the coarse side of a grater; toss them together, but don't crush them. Pour vegetable oil into a skillet and set it over the heat. Add the finely chopped onion and cook until translucent. Add the carrots and cabbage and fry over high heat until the cabbage turns golden at the edges, about five minutes. Let the cabbage cool before you salt it. If you like, you can stir chopped boiled eggs into the finished filling. Now make the second filling: cut the apples into small cubes, add the water and sugar, and stir. Simmer over low heat for five minutes, stirring so it doesn't stick. Let it cool, and add nuts, raisins, or cinnamon if you like. Now for the dough: in a deep bowl, combine the baking soda, salt, and cold kefir and stir. Let it sit a couple of minutes until foamy. Add the sifted flour and knead into a soft dough. Turn it out onto a floured surface and divide into 6 pieces. Roll each piece into a ball, flatten it, and roll it out into a square about 1/8 inch (3–5 mm) thick, like a dumpling wrapper. Divide each filling into three portions. Put cabbage filling in the center of 3 squares and apple filling on the other 3. Fold and pinch them shut like envelopes.
- Fry in vegetable oil until done on both sides.
- If you'd rather, you can bake the pies instead. Line a baking sheet with foil or parchment, arrange the pies, and brush them with water using a pastry brush. Preheat the oven to 425°F (220°C) and bake for 15 minutes, then lower the temperature to 400°F (200°C) and bake another 15 minutes, until golden. Brush the baked pies with butter or oil, stack them one on top of another, and cover with parchment or foil so they steam and soften. Then they're ready to serve. Enjoy!
