Fried Beef Brains with Onions

- Beef brains are an offal known for their especially delicate flavor. That said, they're not the easiest thing to digest, so this isn't a dish for kids — but there's no reason to deny yourself such an unusual treat now and then. It makes a delicious appetizer! It's not everyday fare, but it's worth cooking from time to time. 1. Peel the red shallots. Slice some into rings and set them aside for serving; roughly chop the rest with a knife. 2. Peel the garlic and cut each clove into a couple of pieces. 3. Make the spice paste: put the onion and garlic in a blender, then add the caraway seeds, turmeric, and ground coriander. 4. Blend everything into a smooth paste, then stir in the ground black pepper. 5. Rinse the beef brains thoroughly under running water, removing the membrane and any blood clots. 6. Cut the brains into pieces. Rub each piece with the spice paste and place them in a deep bowl. Season with salt to taste. 7. Cover the bowl and refrigerate to marinate for an hour. 8. When the time's up, transfer the brains to a saucepan and add a little water — about half a cup is enough. 9. Set the pan over low heat and simmer for about 15 minutes; then it's time to fry. 10. Add the coconut oil to a skillet and set it over the heat. Fry the brains in the hot coconut oil until fully cooked through. Serve garnished with the reserved onion rings and fresh herbs. Enjoy!
