    1. Cut the brie into wedges and put them in the freezer for half an hour. 2. In a blender or food processor, combine the nuts (use any mix you like), sesame seeds, finely chopped thyme, and salt, and pulse to grind. Spread the mixture onto a flat plate. 3. In a separate bowl, crack the egg and whisk it lightly, then pour in the cream and whisk everything together. No machine needed — beating by hand is fine. 4. Take the cheese out of the freezer and bread it: first dip each piece in the egg-and-cream mixture, then roll it in the nut mixture, pressing gently so it forms a fairly thick nut-and-sesame crust. 5. Place the breaded cheese pieces in a plastic container, cover, and refrigerate for at least an hour — longer is better, but no more than six hours. This makes it easy to prep ahead: assemble in the morning, then quickly fry the cheese in the evening when guests arrive. 6. Once the pieces are well chilled, take the container out and get ready to fry. Pour vegetable oil into a heavy-bottomed skillet — about 1 inch deep. Set it over medium heat and heat the pan well. 7. When the oil is hot, fry the cheese in batches, browning it on both sides until deeply golden. Transfer the fried pieces to paper towels to drain off the excess oil. 8. Serve the fried cheese right away, while it's still warm. Enjoy!
