Fried Zucchini with Tomato Paste

An easy, family-friendly dish that's genuinely delicious. Fried zucchini with tomato paste is light and tasty. If you'd rather skip the tomato paste, add a few chopped tomatoes (peeled, of course) instead — you'll end up with an even lighter spring dish! Enjoy — and eat well!

    If the zucchini are young, you can leave the skin on; if they're more mature, it's better to peel them. Cut them into roughly 1/2-inch cubes. Pour vegetable oil into a deep skillet and fry the zucchini for about 10 minutes, stirring a couple of times so they don't scorch.

    Peel the onion and cut it into cubes as well.

    Add the onion to the zucchini and fry, stirring, for another 5 minutes.

    Season to taste with salt, pepper, and your favorite herbs. Stir.

    Next stir in the tomato paste.

    Now for the parsley — don't be stingy with it. It's really delicious and fitting in this dish. If you're not a fan, a couple of sprigs will do; if you love it, a whole bunch is just right. Just rinse it well and pat it dry with paper towels.

    Add the herbs to the vegetables, stir, and simmer for another 5 minutes.
