Step 1:
How to cook pancakes on kefir with apples? First, prepare all the necessary ingredients. Any apples will do, but sweet and sour is better. If you take sour ones, you can increase the volume of sugar. If sweet, on the contrary, reduce.
Step 2:
In a separate bowl, rub the chicken eggs with sugar and salt until smooth. We don't need a lush foam, so we don't need to whip it up.
Step 3:
Pour soda into the kefir and mix. Keep in mind that the mass may increase in volume due to a chemical reaction, so pour kefir into a large glass in advance.
Step 4:
Pour the kefir into the egg mixture and mix until smooth.
Step 5:
Sift wheat flour directly into the dough. To do this, take a small sieve so that the flour does not spray on the surface of the table.
Step 6:
Mix the dough well so that there are no lumps in it. You can do this with a spoon, whisk, fork or mixer.
Step 7:
Wash the apples well, dry them, remove the cores and cut into small cubes. Since my apples have a thin and tender skin, I do not peel it off them - you can peel the apples before slicing.
Step 8:
Add the apples to the dough and mix. By the way, you can grate apples instead of slicing, then the pancakes will turn out more tender.
Step 9:
Preheat a frying pan with vegetable oil and fry the pancakes on each side for 2-3 minutes.
I always associate autumn weather with apples. Therefore, with the beginning of the autumn coolness (we have not yet reached the real cold) I bought apple tea and baked apple pancakes. I sat down at my favorite book and spent most of the weekend like this with great benefit for the soul. It seems to me that such unloading is very necessary and it is necessary to allocate time at least once a month only for yourself.
Be prepared for the fact that flour may need more or less than indicated in the recipe. Focus not on the amount of flour, but on the desired consistency of the dough. To avoid mistakes, read about flour and its properties!
Use oil with a high smoking temperature for frying! Any oils are useful only until a certain temperature is reached - the point of smoking, at which the oil begins to burn and toxic substances, including carcinogens, are formed in it.
Unrefined oils, with rare exceptions, have a low smoking point. There are a lot of unfiltered organic particles in them, which quickly begin to burn.
Refined oils are more resistant to heating, and their smoking point is higher. If you are going to cook food in the oven, on a frying pan or grill, make sure that you use oil with a high smoking point. The most common of the oils with a high smoking point: refined varieties of sunflower, olive and grape.
