Pork Skewers in an Air Fryer
No grill? No problem — delicious kebabs are guaranteed! For city dwellers, an air fryer is a real lifesaver when there's no time to head out to the countryside. Pork skewers made this way are a big step up from oven-baked ones. The only thing they're missing, really, is that whiff of woodsmoke.

Step 1:
How do you make pork skewers in an air fryer? Any boneless cut of pork suited to roasting or frying will work. Rinse the meat under running water and cut it into serving-size pieces. Cut them a little smaller than you would for grilling over coals, so they cook through in time.

Put the pork in a bowl. Peel the onion and slice it into rings. I can't picture a kebab marinade without onion — but of course, if you don't care for it, just leave it out!

Step 3:
Add your favorite kebab spices and seasonings — but no salt yet! That goes in at the very end, right before cooking. I use khmeli-suneli (a Georgian herb blend), bay leaf, and a store-bought kebab seasoning. Be careful with pre-made blends: they often contain salt, so it's easy to oversalt the dish later.

Step 4:
Mix the meat and spices together, gently massaging the pieces of pork with your hands. It's best to do this wearing disposable gloves.

Pour sparkling mineral water over the meat so that all the pieces are submerged.

Set a small flat plate right on top of the meat and weigh it down with something heavy. Let the pork marinate in the fridge for at least two hours — and the longer it sits, the better it tastes. I usually marinate the meat in the morning, and by evening it's ready to cook.

Step 7:
Salt the meat and thread it onto the metal skewers that came with your air fryer. Set them on the middle rack, greased with a little sunflower oil. Add the onion too, if you like it. Cook at 400°F (205°C) on medium fan for 20 minutes, turning the skewers with tongs after 10 minutes. I've never used wooden skewers in the air fryer, but if you soak them in water first (so they don't scorch), you could give it a try.
- Every oil is only good up to a certain temperature — its smoke point, where it starts to burn and form harmful compounds. Choose a refined oil with a high smoke point for cooking at high heat.
- Cooking time, temperature, and fan settings can vary a lot between air fryer models. Go by your own machine and by how the meat looks: it should be nicely browned, not scorched and not dried out.
- Serve the skewers with fresh vegetables and a tomato-based sauce.
- Enjoy!
- You can swap the pork for another meat. Just note that cooking time, flavor, and calorie count will change: beef takes longer than pork, while chicken or turkey takes less.
- Pierce the meat with a knife: if it slides in easily and the juices run clear, it's done; if the juices are pink or red, keep cooking.
