Pancakes with red caviar

Native Russian food is a delicacy nowadays. In Russia, pancakes with caviar were baked the size of a saucer. Buckwheat flour was traditionally used, and the caviar itself was not red, but black, beluga. But later it was wheat pancakes with red caviar that won the right to become a symbol of Russian cuisine.

    Add sunflower oil to the dough and mix again with a mixer. This is necessary so that the pancakes do not burn and are easier to remove from the pan.

    Heat a special pancake pan (with low sides) well over high heat, then lubricate with a drop of sunflower oil. You can not lubricate at all, if you are one hundred percent sure of the non-stick properties of the pancake.

    Reduce the fire to medium. Pour a small ladle of dough into the pan. I use a ladle from a slow cooker. And align the dough layer in a circular motion, forming an even pancake. Fry for about a minute.

If the frying pan is of high quality, then you will need to lubricate it with oil only once - the first time. Then the pancakes will be well removed without oil. But there is nothing criminal in greasing the pan every three or four pancakes.
Keep in mind that the pancakes according to this recipe turned out to be slightly sweet. But just a little. I just think that the contrast of tastes (sweet and salty) is always good. The sweet pancake is set off by salty caviar - just delicious.
I served these pancakes as a cold snack. Due to the shape, the filling did not fall out and the eggs inside remained intact. If necessary, guests could add more caviar to their pancake.
