Cooking method

    First, set a large skillet over medium heat and wait for it to warm up. Pour in the chickpea flour and start stirring. Toast the chickpea flour for a few minutes, stirring constantly, until a distinct nutty aroma appears. Now reduce the heat and add the ghee to the flour.

    Add the shredded coconut and nutmeg to the laddu. If you have a whole nutmeg, just grate it on a fine grater. Mix thoroughly — and as you'll notice, you need to stir constantly so the laddu sweets don't take on a burnt taste. The toasted hazelnuts or any other nuts should be crushed (you can do this by covering them with a napkin and tapping with the bottom of a glass) and added to the mixture, then stirred in thoroughly again.

    Continuing to stir the laddu, toast it over low heat for another 10 minutes or so: all the flavors should come together. Remove the laddu from the heat, add the powdered sugar, mix everything again until fully dissolved, transfer to a plate, and leave to cool for a couple of hours. The mixture should be cold so you don't burn your hands when shaping the balls, and so the chickpea balls hold their shape rather than spreading out on the plate.

    Moisten your hands with water, scoop up a tablespoon of the laddu mixture, place it in your palm, and start rolling a chickpea ball. Put the finished sweet on a plate and repeat. If you like, you can roll the laddu sweets in shredded coconut, crushed nuts or sesame seeds. To do this, pour the chosen ingredient onto a plate and roll the finished sweet ball in it. Before serving, you can chill them in the refrigerator for 15 minutes so they firm up.
