- Clean and gut the herring and cut it into fillets. 2. Cut the onion into half-rings and marinate it in lemon juice. Season with pepper and add the sugar. Leave for 10 minutes. 3. Make cuts along the backbone side of each fillet, opening it up like a book. 4. Then spread cream cheese on the fillet. Drain the marinade from the onion, pat it dry, and lay it over the cheese. 5. Cut the pickles into strips and arrange them over the onion. Sprinkle chopped dill on top. 6. Roll the herring up and refrigerate for a couple of hours. Mix the oil with the mustard. Then take out the roll, slice it, and serve on pieces of dark rye bread, drizzled with the oil.
