A pleasantly crunchy salad in a hurry. It couldn't be simpler or faster. It makes a great snack alongside vodka.

    Peel the cucumber and cut it into pieces about the size of the croutons you'll be using.

    Add the cucumbers to the sauerkraut.

    Add the croutons and mix.

  • It's best to use seasoned or flavored croutons. Mine were homemade, with turmeric and paprika. In that case you won't need any extra spices, and the brine from the sauerkraut acts as the dressing.
