Boyar-Style Pork

Juicy pork and mushrooms baked under a golden cheese crust. I ordered this dish a few times at a café, and now I finally got the chance to make it at home — and it turned out every bit as good. I had two thick bone-in chops, so I only got 2 servings. If your pork is boneless, it's best to butterfly it lengthwise into 2 pieces.

    Step 12

Bake in an oven preheated to 400°F (200°C) for 40–50 minutes. Oven temperatures and cooking times vary, so keep an eye on your own oven.

  • Remember that every oven runs a little differently, so the temperature and time may not match the recipe exactly. Getting to know how your own oven behaves is the surest way to nail any baked dish.
  • Cooking oils stay wholesome only up to a certain point — the smoke point, where the oil begins to burn and form harmful compounds. Pick an oil with a high smoke point for anything you're frying or roasting.
  • If you use a store-bought spice blend, read the label first. These mixes often already contain salt, so factor that in or you risk over-salting the dish.
