Boyar-Style Pork
Juicy pork and mushrooms baked under a golden cheese crust. I ordered this dish a few times at a café, and now I finally got the chance to make it at home — and it turned out every bit as good. I had two thick bone-in chops, so I only got 2 servings. If your pork is boneless, it's best to butterfly it lengthwise into 2 pieces.

How do you make Boyar-style pork?

Rinse the pork, pat it dry, and pound it lightly on both sides.

Season the pork with salt and pepper, sprinkle with the pork seasoning, and brush with mustard.

Let it marinate for 20 minutes.

Make the filling: lightly sauté the onion and mushrooms in a little sunflower oil.

Slice the mushrooms thin and cut the onion into rings.

Make the sauce: grate the cheese and press the garlic through a garlic press.

Stir the cheese, sour cream, and garlic together until combined.

Spread the mushrooms and onions over the top, then coat with the cheese sauce.

Bake in an oven preheated to 400°F (200°C) for 40–50 minutes. Oven temperatures and cooking times vary, so keep an eye on your own oven.
- Remember that every oven runs a little differently, so the temperature and time may not match the recipe exactly. Getting to know how your own oven behaves is the surest way to nail any baked dish.
- Cooking oils stay wholesome only up to a certain point — the smoke point, where the oil begins to burn and form harmful compounds. Pick an oil with a high smoke point for anything you're frying or roasting.
- If you use a store-bought spice blend, read the label first. These mixes often already contain salt, so factor that in or you risk over-salting the dish.
