  • Mix the kefir, eggs, flour, salt, and sugar, whisking lightly. Drop 1/2 tsp of baking soda into a cup of rapidly boiling water, stir quickly, and pour it into the batter; mix and let it rest for 5 minutes. Add 2–3 tablespoons of vegetable oil, stir, and fry the pancakes. They come out thin and very lacy. Be sure to cook them in a really hot skillet — that's what gives you far more holes.
