Cooking method
- Bake the pumpkin in the oven until tender, then purée it in a blender. Mix the pumpkin with mashed cottage cheese, beat in the eggs, and add salt, sugar, flour, and baking soda; knead into a smooth dough. Roll the dough into a thin log and cut it into small pieces. Deep-fry them. Lift out the doughnuts and let the excess oil drain off. Just before serving, dust the doughnuts with powdered sugar.
