- I remember my mom making meat with cheese for New Year's and birthdays when I was a kid. I'd wanted to treat my own family to that same delicious dish for ages, but the recipe was hopelessly lost, so I had to experiment my way through a bunch of versions. Recently I came across a really interesting recipe for fried beef with cheese online and decided to make it — but it was so vague about marinating the meat that I had to improvise as I went. It didn't turn out exactly like it did in childhood, but it was still pretty good. That said, I decided that next time I'll use veal, and chilled rather than frozen. I cut the beef into strips — very thin ones — season with salt and pepper, mix in the seasonings and half of the mayonnaise, and let it sit for an hour. (By the way, you can keep the meat this way in the fridge for a few days; it only gets more tender.) I beat the remaining mayonnaise with the eggs and flour, pour that over the meat, and stir again. I grate the cheese on a fine grater and mix it with garlic and a touch of sour cream. Using a tablespoon, I carefully drop the meat onto a hot skillet and fry it briefly, gently flip it, top it with the cheese, wait a couple of minutes, cover with a lid, and take it off the heat. At first my meat kept falling apart when I flipped it, but then I started patting it down flat instead of piling it up, and shaping each piece to about the size of a spatula.
